Cherry Chocolate Clafoutis

Cherry Chocolate Clafoutis

125ml flour

30ml cocoa powder

50g icing sugar

25g butter, melted

375ml milk

3 eggs, whisked with a fork

250g pitted, halved fresh cherries

60ml rum or brandy

extra icing sugar for dusting

Preheat oven to 200 degrees celcius and prepare an oven safe pie dish with cooking spray or melted butter. Sift all the dry ingredients together in the bowl of a food processor. Mix melted butter, milk and eggs in a jug and add to the dry ingredients. Mix until a batter forms. Pour 125ml of the batter into pie dish and bake for 10 minutes. Drain the cherries and discard the liquid. Add cherries to batter and pour over the cooked base once you have removed it from the oven. Place back in the oven and bake for a further 40 minutes until set. Serve warm with whipped cream or ice cream.
